This phase is about identifying specific visual, aromatic, and structural markers that can only be attributed to individual grape varieties.
We will conduct careful "compare and contrast" tastings to really draw your attention to what to look for in identifying grape varieties.
You will also learn how to calibrate your palate so that "low", "medium" and "high" are consistent no matter what you are tasting.
Next, you will experience what colors, aromas, and tastes directly point you to what type of climate and specific region a wine comes from.
After this step, you will have even more corroborating evidence which directly builds confidence in your tasting ability.
Once we have your grape and origin markers in place, we'll kick off the Winemaking Phase. This is where you will learn how to taste differences in winemaking such as types of oak and taste for variations in specific vintages.
If you’ve done the first two steps correctly, this last step is the knockout punch. It provides you with the most confident evidence that will confirm the conclusions that you drew on in previous lessons.
